Chefs’ Picks: Veggie Comfort Food

Live music isn’t the only allure of Geraldine’s; this Austin hotspot also attracts the crowds with its array of indulgent menu items that includes a chicken liver mousse tart and grits made with oxtail and mole negro. Even the plant-forward dishes here are decidedly decadent, including the cornmeal fried mushrooms dreamed up by Sous Chef Adam Walker. “My inspiration for the dish was the play on fried oysters,” says Walker. “We source our mushrooms from Blanco River Mushroom Farm, where they produce a very great blue oyster mushroom that has the texture of a fresh oyster once cooked.” Walker finishes the fried morsels with a floral garnish whose distinctive taste adds to the oyster-like flavor of the dish. “Borage flowers have a nice flavor that is comparable to a West Coast oyster — a little melon-rind-like flavor.” Walker also channeled his culinary creativity when deciding on what dipping sauces to pair with the mushrooms. In addition to agrodolce, the chef serves a spreadable version of the Italian custard known as sformato.

A generous handful of oats, nuts, and seeds lends the same satisfying crunch as croutons, while adding way more flavor and nutritional punch. Local’s Guide: Austin

Of course, you’ll have to come and visit me at Geraldine’s on the fourth floor of Hotel Van Zandt in the historic Rainey Street district downtown. We’ve been open since November 2015 and our food is Southern inspired. The menu has familiar bites, such as crispy pork ribs and hush puppies, but also unique plates like the pig face candy bar and duck egg scramble. The ceviche tacos are a must order. And our bar team had the distinguished honor of winning the ‘Official Drink of Austin 2016’ competition with a libation called Far from the Tree, a rum based concoction that is second on in popularity to our signature Willie’s Cup (double rye whiskey with hemp seed milk and sage.

11 Scotch Cocktails to Drink in Bars Now

Jen Keyser, the chief of bar operations at this downtown Austin bar and restaurant, came up with this straightforward and satisfying cocktail made with Dewar’s blended scotch, lemon juice, simple syrup and soda water. She combines all of the ingredients except for the soda water, shakes the cocktail until cold, strains it into a Collins glass over ice and tops it with soda water. The garnish is a Luxardo maraschino cherry and lemon wedge.

Play It Again

For the past eight years, she’s become an expert in navigating her way through crowded live-music performances and concert halls. As the director of music at Hotel Van Zandt, Lauren Bucherie has a pretty sweet, although often stressful, job of working with both up-and-coming and established musicians. The Best Brunch in Austin
